Mac & Cheese but lighter with more flavour & colour!
2 cups macaroni
2 tbsp diced garlic
1/2 cup diced onion
1/2 cup diced green pepper
1/2 cup chopped cherry tomatoes
1/4 cup chopped green onion
1/4 cup sliced black olives
1/4 cup sundried tomatoes
1/2 cup crumbled feta or goat cheese
1/4-1/2 tsp oregano, basil and parsley
1/4 cup lemon juice
Whatever leftover protein you have in the fridge (chicken, fish, chickpeas, etc)
1. Cook pasta according to instructions.
2. Sautee garlic, onion and green pepper.
3. Mix in with pasta, cherry tomatoes, olives, sundried tomatoes and feta cheese.
4. Add spices and lemon juice.
5. Mix well and enjoy!
