Spice up your chicken by adding some paprika! This seasoning is great for whole chicken or pieces. And as usual, it’s under 7 ingredients!
Chicken- 1 whole chicken or use thighs for more fat and iron (plus easier to deal with)
1 cup chopped or diced tomatoes (canned or jarred is great)
2 heaping tablespoons chopped garlic
1 tablespoon paprika
1 green (or red) pepper, finely chopped
Liberal amounts of olive oil
Black pepper to taste and pinch of sea salt (leave out if cooking for young kids)
1. Heat the oven to 375*F.
2. Put chicken in a baking dish. Slather chicken in olive oil.
3. Mix together garlic and paprika and pat over chicken.
4. Pour diced tomatoes and green pepper over chicken. Add salt and pepper if using.
5. Bake according to chicken used. Usually about 20 minutes for chicken thighs, might be closer to 50 for whole chicken, but check with a meat thermometer!
