You haven’t lived until you’ve tried grilled peaches! They’re the perfect juicy and sweet addition to this tasty summer salad! Perfect for enjoying outside on the weekend and leftover for your weekday lunch!

Peaches, halved

Arugula

Red onion, diced

Boccocini

Pumpkin Seeds

Olive Oil

Balsamic Vinegar

1. Heat grill to 375F. Brush olive oil on peaches and place on grill. Cook 3-4 minutes per side, making sure not to burn. Set aside.
2. Assemble arugula, red onion, pumpkin seeds and boccocini in bowl.
3. Slice peaches (can remove skin if desired). Add to salad.
4. Mix together olive oil and balsamic vinegar (3:1 ratio) and whisk until mixed. Pour over salad and toss. Enjoy!
